I am a big fan of coconut cream and I love finding new ways to use it. Today I want to answer a question asked by many “Can you whip coconut cream” and if so “How to whip coconut cream”. I will also share two super simple vegan dessert recipes; a Thai banana and coconut cream dessert, this easy vegan dessert recipe is foolproof. Let´s get going shall we.

The Whip In Coconut Cream

A lot of you have probably tried whipping coconut cream and failed. So can you whip coconut cream? The answer is yes but it will require a little bit of planning and preparation.

Coconut cream is a great substitute for regular cream. The consistency is very similar and the taste is absolutely yummy and the best part of it all is that no animals are getting hurt in the process. You can purchase coconut cream that is fully organic and since it is a nut it is completely vegan.

Let me tell you how to whip your coconut cream into shape.

First of all you want to put the coconut cream can in the freezer as well as the whisk you are intending on using.

I always use my blender so I put the actual blender insert (the part that has the metal on it) in the freezer. You only need to leave it in there for around 10-15 minutes. Hence, the small amount of planning and preparation.

Whilst it is in the freezer feel free to go about your business.

After the 10-15 minutes you can whip it, however, you do not want to empty the whole can into your bowl or what ever you are using. You want to grab a spoon and grab the thick part of the coconut cream out, which will be the top layer. So do not shake your can as you do not want the two parts to mix. This can be compared to regular milk, when you have fresh milk the cream will separate from the actual milk and you will be able to scoop it from the top. Same goes here. You will be able to scoop the cream from the top.

I always put a tiny bit of pure vanilla bean powder in it for flavor. You do not need much, only a pinch. You can find my preferred vanilla bean powder here.

After this you grab your cold utensils out of the freezer and let the whipping begin, or like myself, press the button. It will get to the same consistency as regular cream so do not go crazy with the whipping, check it often to make sure you get the consistency you are after.

Thai Banana And Coconut Recipie

This is one of my favorite desserts as it is so simple and delicious.
Especially when it is a bit colder outside as it is traditionally served warm.

All you need is:

2 bananas

1 1/2 cup of coconut milk or coconut cream

1 tablespoon of sugar

A pinch of salt

(Vanilla Bean Powder)

Slice the bananas into around half a centimeters slices.
Pour coconut milk ( I always purchase coconut cream as I find it a lot nicer as it gets thicker and I prefer the creaminess). Bring it to a boil in a pot, then add the bananas and lower to a light simmer. You can now add the sugar and the salt and if you wish the vanilla bean powder. Keep an eye on the bananas as you do not want to boil them into a mush, usually needs to simmer around 4-5 minutes.

Serve warm in a bowl.

Frozen Coconut Cream Dessert

This is kind of like homemade coconut ice cream. I was making this almost every day when I was living in Thailand as this is the perfect, simple, vegan dessert recipe. You can make it as simple as you want.

There are two ways to make this a cheater way and the “professional” way.

So the simple way starts with scooping out the coconut cream from the can and putting it into a dessert sized bowl or a silicone tray, depending on how many you are making. Silicone trays are preferred as it will sure make it easier when serving. So back to it, all you do is scoop the cream out and give it a bit of a stir to make it nice and smooth, scoop it into the silicone tray or perhaps even into an ice cream tray. Add any fruits or berries that you like.
I love adding raspberries and cacao nibs. Let it freeze.
Voilá! ready to serve.

The other way is to whip the coconut cream with a bit of vanilla and sugar to taste. You can now add any ingredients you like such as vegan chocolates, berries, or perhaps even a little bit of rum and raisins. Blend everything together. If you add berries etc and blend remember that it will change the color of the ice cream, if you want it to still be bright white you should add after mixing. I always pour the ice cream into a bread tray and then just let it freeze. You can use a regular ice cream scoop and whatever kind of toppings you like. I love a bit of fresh berries.

Conclusion

All that is delicious is not bad for you. Coconut cream is so versatile and easy to use. I love making a nice curry with coconut milk, having it for breakfast or dessert. You can use it for so many things. Do not be scared to try something new. Perhaps you will not succeed the first time, nor the second or third, at least you have figured out how not to do. The whipped coconut and the frozen coconut are just the base. From here just let your imagination flow and create something delicious.
