Easy Vegan Breakfast Recipe

A lot of the time I will get the questions what I eat for breakfast since I stay away from animal products. I basically eat the same but I switch dairy to plantbased. I am also very contious of how my body feels and I notice that when I eat this overnight oats / chia seed pudding I will keep my blood sugar levels more stable and I do not feel like snacking.

Vegan Overnight Oats / Vegan Chia Seed Pudding

This is such a simple, delicious and filling breakfast or even snack. If you want to make this a fitness breakfast you can also add some protein powder into it.

I have always been a big fan of chia pudding and also overnight oats so I thought I would just combine them into one.

The basics of overnight oats is pretty much oats and some sort of liquid such as milk or yoghurt. The basics of chia pudding is fairly similar; chia seeds and a liquid such as milk.

Recipie
1 dl oatmeal
1 tbls chia seeds
0,5 dl vegan yoghurt – you can add more in to increase thickness ( I use soyghurt from Planti)
1 dl of vegan milk ( I use oatley oatmilk)
1 pinch of vanilla powder ( I use Bourbon Vanilla powder)
1 tbls of freshly squeezed lemon juice
1 dl of frozen raspberries
( For more protein, mix in a scoop of your favorit protein powder)

Blend everything in a bowl and let sit overnight in the fridge.
For toppings I use nuts and seeds, some dry fruits or berries and some fresh or frozen raspberries.


Health Benefits Of Chia Seed

Chia seeds contains good omega-3 Fatty acids which is really good for you heart and it also helps to lower your blood pressure.

They also contain iron and calcium. Iron is a mineral that is needed to transport oxygen through your body.
Calium is good for our bones as well as our muscles and protects us against blood cloths.
Fiber is good for our digestion and is also something that can be found in chia seed.
Last but not least, Antioxidants help protect our cells from free radicals that otherwise might cause cancer or heart disease.



Health Benefits Of Oats

Oats also contain minerals as well as fibers, antioxidants and vitamins.Oats can help you with weightloss, digestive issues and also reduce the risk of heart disease. Oats will give you energy thoroughout the day when eaten in the morning, as it will keep your bloodsugar levels steady and therefor minimize cravings.



Toppings

The toppings and the flavors can be exchanged for pretty much anything. Try adding in some blueberries, or perhaps some applesauce and cardamom for a more of a fall feeling, perhaps topp it with some apples fried in cinnamon.

Maybe make it into a tropical breakfast with some pineapple and tropical fruits.
You can go which ever directions you want with this.

I try to get in some fruits or berries for the day and also some seeds and nuts that will give me the energy I need as well as provide some well needed vitamins and minerals.

Conclusion

I enjoy cooking and eating healthy, this will keep your energy levels steady throughout the day. This breakfast or snack will keep you at a steady bloodsugar level where you will not have any peaks or drops, this will reduce cravings and snacking.

My favorite part about chia puddings and overnight oats is how versitile it is. You can do so much with so little.

I really didn’t know about all the Chia Seed benefits. For me, one of the most important is it contains good omega-3 Fatty acids! Thanks for this recipie.

  2. I have been a fan of oats all my life. Even as a kid, my brothers wouldn’t want to eat their oat meal and I’d eat mine and theirs. LOL. Now being a vegan, there are so many different recipes were we can still enjoy oats and all its benefits: minerals, fibers, antioxidants and vitamins! Thank you for this recipe.
